Pork Chops with Veggies
Feeds 2 people
 
Ingredients
1 pound Pork Chops
Carrots
Broccoli
Cauliflower
Olive oil or Grape seed oil
Mrs. Dash
 
Instructions

  1. Pre-heat grill.
  2. Pre-heat oven to 350. Place all carrots, broccoli and cauliflower pieces into a large bowl and mix in olive oil. Spread on cookie sheet covered in aluminum foil.
  3. Sprinkle with Mrs. Dash, salt and pepper. Place in the oven for approximately 30 minutes.
  4. Place pork chops on the grill and sprinkle garlic salt and pepper.
  5. Enjoy!

IMG_1242Lettuce Pork Tacos
Feeds 2 people
 
Ingredients
1 pound Pork Loin
1 tsp Cheyenne Pepper
2 Tbsp Ancho-Chili Powder
1 tsp Garlic Salt
1 tsp Cumin
1 tsp Oregano
¼ Lime juiced
2 Tbsp water
1 tomato
Head of lettuce (I like Boston lettuce best)
Black beans
Greek Yogurt (in place of sour cream)
Shredded cheese
 
Instructions:

  1. Place olive oil in pan over medium heat. Slice the pork loin in long thin strips and place in heated pan.
  2. When meat is almost finished cooking add Cheyenne pepper, ancho-chili powder, garlic salt, cumin and oregano water to pan and stir until all meat is covered.
  3. Wash lettuce leaves under cold water and place on towel to dry excess water.
  4. Dice tomatoes, shred cheese and heat beans.
  5. Use the lettuce as your “tortilla” and fill with all taco ingredients.

Herb Roasted Pork

Feeds 4 people

Ingredients
2 lbs pork loin
2 cloves garlic
1 tsp dried basil
1 tsp thyme
1 tsp dried rosemary
10-15 cranks fresh cracked pepper
½ tsp salt
2 Tbsp olive oil

Instructions
Preheat oven to 425F Combine garlic, basil, thyme, rosemary, fresh cracked pepper and salt. Place in food processer or blended and pulse until garlic is minced.

Add 2 Tbsp of olive oil to the herb mixture. Place the pork loin on a baking sheet covered with foil. Rub the oil and herb mix over the entire surface of the pork.

Roast in the oven for 35-45 minutes or until the internal temperature reaches 145 degrees. Allow pork loin to rest for ten minutes before slicing.

Serve with fresh vegetables.
Sliced zucchini and yellow squash and place in skillet with 2 Tbsp olive oil. Cook on medium heat until zucchini and squash are soft. Season with pepper and salt.
