Grain Free Banana Bread

2 eggs
2 very ripe bananas mashed
1/4 cup honey
1 tsp lemon juice
3 cups cashews (ground in blender)
1 tsp baking soda
1/8 tsp sea salt
1/2 cup walnuts/pecans or gluten free chocolate chips (optional)


Preheat oven to 325 degrees and grease 1 large bread pan or 3 mini loaf pans. Beat eggs with mixer (whisk attachment) on medium-high speed for 2-3 minutes, until thick and pale yellow. Reduce speed, add bananas and mix until combined. Pour in honey and lemon juice and mix until combined. Mix dry ingredients, then add to wet ingredients in 2 additions. Mix until combined, fold in add-ins if using, then spoon batter in loaf pans and spread evenly.  Bake for 35-40 minutes (mini pans) 45-50 minutes (regular pan) or until gold brown and toothpick inserted in center comes out clean. Cool and enjoy!


Banana Chia Seed Pudding
Serving size: 1/4 cup
Feeds: 1-2 people

1/4 cup Coconut milk
1 banana
2 tbsp Chia Seeds

In blender mix the banana and the coconut milk together on medium speed for approximately 2 minutes. Add chia seeds and pulse several times till completely blended. Place in a dish with a cover and cool overnight.



Quick and Easy Protein Balls
Prep time: 10 minutes

1/2 cup all natural nut butter (almond, cashew butter, peanut butter, etc)
1/8 tsp sea salt
2/3 cup vanilla protein powder (1/2 vegan protein powder)
3 tbsp honey or agave syrup

Mix the nut butter, salt and honey in medium size bowl. Add protein powder and stir. It should appear to be dough like. If to wet add small amount of additional protein powder, if too dry add small amount of milk, coconut milk or almond milk.

Scoop and to into one inch size balls. For added taste roll in unsweetened coconut flakes, cocoa powder, dark chocolate or cinnamon. Store in air tight container!


Coconut Cranberry Protein Bars


  1. 1/4 cup unsweetened shredded coconut flakes
  2. 1/4 cup organic dried cranberries
  3. 1/4 cup almond butter
  4. 2 tbsp almond meal
  5. 2 tbsp flax meal
  6. 3 tbsp coconut oil
  7. 1 tbsp raw honey (add an additional tbsp if you like things a little sweet)
  8. 2 eggs
  9. 6 scoops Vanilla Protein powder
  10. Dash Himalayan sea salt
  11. Optional: 1/4 Organic dark chocolate chunks/Enjoy Life’s Chocolate Chips


  1. 1. Preheat oven to 350
  2. 2. Come all ingredients in a bowl and mix until dough-like consistency
  3. 3. Line a 8×8 baking dish with parchment paper
  4. 4. Roll out dough into a flat and even square (note: if you have a bigger baking dish, simply roll out the square to one side)
  5. 5. Bake for 15-20 minutes or until slightly hardened
  6. 6. Let cool and slice into squares
